We let the yeast trials out to catch some rays! Or rather, we're crammed into such a small space that any time something needs doing pallets need to be shuffled around to accomodate it...Here we have V1116, W15, BA11, and of course EC1118. I don't feel like I'm letting any secrets out with naming them because honestly I don't prefer any of them to our wild yeast control from the same pressing! The idea was to push the temperature ranges to the low end of recommended, since that's where our ambient temps sit through the post-harvest season, but in this case I have to say I'm not overly impressed. The final piece of my very #diy production process

The final piece of my very #diy production process to come together was the water bath pasteurizer. Without natural gas I couldn't do the typical tankless water heater style of self-built pasteurizer, so we ended up going electric! It ended up being cheaper to have an immersion heating element built, and to turn a macro bin into a giant kettle. Several months of use later, and it's still going strong!Thanks to hardware from @craftmetrics, the whole temperature cycling process is automated, and pasteurization units are tracked in real-time. A fresh and fruity apple aroma with a clean and crisp taste, this cider is slightly more carbonated than our Heritage Dry, though still "pétillant". Smaller bubbles give a less aggressive fizz than that associated with many soft drinks, but still enough to lift those delicate aromas. Well, here I am wishing you all happy holidays and better new year than the last one! I would much rather be doing so with a Christmas bundle of cider and the long-awaited launch of our store, unfortunately it was not to be. Due to some permitting issues with the district and equipment delays, the launch of our tasting room has once again been nudged further into the future.
